Ð¢ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ Ð³Ð¾Ñ‚Ð¾Ð²Ñ‹Ñ Ð±Ð»ÑŽÐ´ и продукции специального назначения

Abstract

Учебно-методическое пособие соответствует ФГОС ВПО по направлению подготовки бакалавров 19.03.04 Â«Ð¢ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ продукции и организация общественного питания». Рассмотрены вопросы организации и проведения Ð»Ð°Ð±Ð¾Ñ€Ð°Ñ‚Ð¾Ñ€Ð½Ñ‹Ñ Ñ€Ð°Ð±Ð¾Ñ‚ по дисциплине Â«Ð¢ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ продукции общественного питания». Представлены рецептуры и Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ блюд, последовательность выполнения операций, органолептическая оценка качества готовой продукции. Приведены методики расчета потребности предприятия питания в сырье в зависимости от его сезонности и кондиции; расчеты готовой кулинарной продукции, правила разработки нормативной и Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¾Ð¹ документации с учетом ÑÐ¾Ð²Ñ€ÐµÐ¼ÐµÐ½Ð½Ñ‹Ñ Ñ‚Ñ€ÐµÐ±Ð¾Ð²Ð°Ð½Ð¸Ð¹. Описание каждой лабораторной работы содержит: тему, цели работы, порядок выполнения работы, инструкцию по Ñ‚ÐµÑ Ð½Ð¸ÐºÐµ безопасности, а так же перечень ÐºÐ¾Ð½Ñ‚Ñ€Ð¾Ð»ÑŒÐ½Ñ‹Ñ Ð²Ð¾Ð¿Ñ€Ð¾ÑÐ¾Ð², основную и дополнительную литературу.
