Abstract

Учебно-методическое пособие предназначено для студентов, обучающихся по направлению подготовки 19.03.04 «Технология продукции и организация общественного питания». Выполнение курсовой работы направлено на формирование компетенций выпускника основной образовательной программы: способность изучать и анализировать отечественный и зарубежный опыт по производству продуктов питания; готовность формировать ассортимент продукции и услуг предприятий питания в соответствии с культурными традициями и обычаями питания стран и народов; разрабатывать технологическую документацию на кулинарную продукцию. Пособие включает тематику, структуру, содержание, необходимые методические и справочные материалы для выполнения курсовой работы. Правила оформления пояснительной записки и порядок защиты курсовой работы соответствует Положению СПбПУ.
