Un Extracto de Maíz Morado (EMM) se evaluó la eficacia antioxidante en salchichas de cerdo curado cocido y sin curar. Valores deTBARS, evaluación color instrumental y las puntuaciones del panel sensorial se evaluaron. Para salchichas sin curar, EMM al 0,2% fue igual de efectiva que 0,1% de hidroxitolueno butilado (BHT) en la reducción de los valores de TBARS. Del mismo modo, EMM al 0,2% de manera significativa (Pb0.01) redujo los TBARS en embutidos curados. La incorporación de 0,2%en las salchichas EMM produjo mayor (Pb0.05) de color CIE valor de a* es inferior (Pb0.05) L* y b*. Paneles sensoriales no detectaron ninguna diferencia en el color, el olor, el sabor, el aroma y la aceptación general de las salchichas de cerdo sin curar con la adición de 0,2% EMM. Sin embargo, hubo cambios negativos en el color y el olor de embutidos curados, a pesar de que el gusto, sabor, y aceptación global fueron similares. Por lo tanto, los resultados sugieren que la EMM es un antioxidante potencial.
