Abstract

Pengalengan merupakan salah satu teknik pengolahan dan pengawetan ikan yang dikemas secara hermetis dan disterilkan. Kekonsistenan mutu penting dilakukan dan selalu diawasi sebagai upaya menjaga mutu dan keamanan pangan produk ikan kaleng. Penelitian ini bertujuan menentukan konsistensi mutu kimia (pH, histamin), fisik (viskositas), dan sensori produk pengalengan ikan lemuru (Sardinella sp.) dalam media saus tomat. Penelitian menggunakan sampel ikan lemuru kaleng merek BTN sebagai salah satu produk yang dihasilkan oleh PT X, Pengambengan. Sampel tersebut dilakukan pengamatan secara triplo selama 12 minggu terhadap kandungan pH, histamin, viskositas, dan sensori (ketampakan, tekstur, rasa, aroma, dan warna). Data dianalisis dengan sidik ragam dan uji lanjut Duncan jika berbeda nyata pada taraf signifikansi 5%. Hasil penelitian menunjukkan bahwa selama waktu pengamatan selama 12 minggu terdapat pengaruh yang signifikan (p<0,05) terhadap nilai keasaman media saus tomat dan nilai histamin sampel BTN. Namun, waktu penyimpanan tidak berpengaruh signifikan (p>0,05) terhadap viskositas saus tomat dan mutu sensori (ketampakan, tekstur, rasa, aroma, dan warna) sampel BTN. Lemuru kaleng merek BTN yang diproduksi PT X telah konsisten dari segi viskositas saus tomat dan sensori namun tidak konsisten dari segi keasaman saus tomat dan kandungan histamin.
