Abstract

加工形態に対応した糯品種を育成するための育成段階での選抜技術を確立するために, 現在栽培している品種, 育成品種について, 餅製品の加工上重要な指標とされる餅硬化性, ラピッド・ビスコ・アナライザー(RVA)による糊化特性, 尿素崩壊性について検討した. 餅硬化性には品種間差が認められ, こがねもちは餅硬化性が高かった. また, 品種と年次間に交互作用が認められた. 育成系統について餅硬化性試験を行ったところ, ヒメノモチより著しく餅硬化性が劣る系統, あるいはこがねもちより明らかに優る系統は認められなかった. 餅硬化性は, RVA特性値中の糊化温度, ピーク温度, 最低粘度, 最終粘度およびコンシステンシーと正の相関関係にあり, ブレークダウンと負の相関関係にあった. また, 餅硬化性, 糊化温度, ピーク温度, 最低粘度, 最終粘度およびコンシステンシーは, 登熟期間の気温との相関係数が高いことから, 登熟気温の影響を受けると考えられた. 育成系統の糊化特性を簡易に判定するために, 尿素崩壊性について検討した. 尿素崩壊性には品種間差があり, 糊化温度と相関関係にあることから, 少量で簡易な餅硬化性の選抜方法として利用できると考えられた. 餅硬化性の優れた品種育成を目的とする場合は, 登熟気温を考慮した餅硬化性の優れた品種を交配母本に選定し, RVAおよび尿素崩壊性により餅硬化性を間接的に初期世代から選抜可能であると考えられた. なお, その場合には, 登熟気温別に選抜するなどを考慮する必要性が認められた.
