Abstract

A pimenta-do-reino é considerada a especiaria mais importante comercializada mundialmente (Sigrist, 2015), sendo seu fruto seco (grão) a porção mais utilizada na culinária (Turrini et al., 2020). Existem três tipos de pimenta-do-reino (preta, branca e verde) que se originam do mesmo fruto e se diferenciam pela forma de produção (Nepomuceno, 2003; Stobart, 2009). A pimenta-preta é a mais consumida, e sua natureza é quente, picante e acre (Nepomuceno, 2003). Para produzi-la, os grãos são colhidos verdes e depois são secos ao sol, adquirindo o aspecto preto ou marrom-escuro e enrugado (Stobart, 2009).
