Evaluasi Kadar Gula, Kadar Air, Kadar Asam dan pH pada Pembuatan Tablet Effervescent Buah Nangka

Abstract

Effervescent merupakan sediaan yang menghasilkan gelembung karbondioksida yang merupakan hasil reaksi kimia senyawa asam dan basa dalam larutan. Tujuan penelitian adalah untuk mengetahui pengaruh perlakuan kombinasi formulasi asam sitrat dan natrium bikarbonat terhadap effervescent buah nangka. Desain percobaan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan 5 perlakuan dan 4 kali ulangan dengan variasi formulasi asam sitrat dan natrium bikarbonat sebesar 30% natrium bikarbonat dan 10% asam sitrat untuk T1, 25% natrium bikarbonat dan 15% asam sitrat untuk T2, 20% natrium bikarbonat dan 20% asam sitrat untuk T3, 15% natrium bikarbonat dan 25% asam sitrat untuk T4 serta 10% natrium bikarbonat 30% asam sitrat untuk T5. Hasil penelitian menunjukkan bahwa terdapat pengaruh perlakuan terhadap kadar air, kadar asam dan pH, namun tidak ada pengaruh perlakuan terhadap kadar gula. Kombinasi 20% natrium karbonat dan 20% asam sitrat menghasilkan nilai pH ideal dan kadar air terendah.
