The general plan of this investigation entail the growing of wheat under normal farming conditions in the selection of material which, on analysis, would give a reasonably representative indication of the carbohydrate status of the crop at a particular time with a view to obtaining some measure of biochemical relationships. The chemical study of starch was limited to the weight berry. The amount of starch in motteled and unmotteled grain was determined, while starch in its components were characterised by measures such as maximum iodine-binding capacity, blue values and specific optical rotation viscosity. The average dot contained of modelled weight 77.6% and that of UN model 74.5%. Irrespective of variety and of whether the grain was modelled or not wheat starch contains 22.4% amylose. Amylose, itself, has a maximum iodine binding capacity of 21%; amylopectin 1% and starch 4.7. Will the ratio of amylose to amylopectin probably remains constant throughout the development of the week Berry it is probable that the molecular size of the starch varies as the grain develops. Starch is soon the dominant accumulated carbohydrate in the ear and berry but for approximately 80% of the whole life of the plant sucrose is dominant. There is enough sucrose stored at the time of the ear emergency to satisfy all of the starch component of the grain if such be required. Total reducing sugars are never accumulated in large amounts in any proportion of the plant which suggests that they are used bound as fast as they are formed. Water soluble fructans are also present in the plant in very low concentrations in their metabolic significance is doubtful.
