Oligosaccharides (from trisaccharide to decasaccharide) in yacon tuberous roots were purified by charcoal-Celite column and gel filtration chromatographies. The oligosaccharides were confirmed to be β-(2→1)fructooligosaccharides with terminal sucrose (inulin type oligofructans) by using enzymatic, 13C-NMR, and methylation analyses.
