Evaluation of Processing Properties for Rice-cake in Induced Waxy Mutants of Rice

Abstract

O. sativa(品種:農林8号,レイメイ,ニホンマサリ),およびO. glaberrimaから人為的に誘発された糯突然変異系統の餅加工特性を評価した.また,これらを異なる登熟温度条件で栽培することにより,登熟温度に対する加工特性の反応を調査した.その結果, O. glaberrimaの糯突然変異系統は,「こがねもち」以上の極めて高い餅硬化性と糊化開始温度を示し, O. sativaの糯突然変異系統は実用品種に比べ低い特性を示した.「ニホンマサリ」由来の突然変異系統では,登熟温度の上昇にともなって,餅硬化性が低下するものが認められた.「レイメイ」由来の突然変異系統においては,餅硬化性が低いにも関わらず澱粉の粘度特性は高いという特性を見出した.原品種を同じくする突然変異系統群内では,登熟温度がほぼ同じであったが,餅硬化性,熱糊化特性,および見かけのアミロース含有率に多様な変異が認められた.本研究によって見出された特徴的な加工特性を有するイネ糯誘発突然変異系統は,新たな餅加工食品や多種多様な加工形態に対応するための有用な育種素材の供給源となり得るものと考えられる.
