Abstract

Açafrão é uma planta de origem grega que fornece uma especiaria, composta por estiletes e estigmas florais. De cultivo bastante custoso e delicado, não é produzido no Brasil, e também devido a isso, seu preço aqui torna quase impraticável o seu consumo. Por outro lado, o açafrão-da-índia (também conhecido como açafrão-da-terra, açafroa e cúrcuma) de origem indiana é bastante produzido e consumido no Brasil, tanto na área farmacológica como na culinária. Há ainda o açafrão-bastardo (ou açafrão-flor) cujas flores são tintoriais e a planta é oleífera, mas pouco encontrada no Brasil. Desta forma vemos, muitas vezes, o nome açafrão sendo empregado para a espécie indiana e muitos trabalhos e pesquisas podem tomar direções erradas se esse nome for consultado nas mídias sem os devidos cuidados. Este boletim esclarece as diferenças botânicas e práticas entre essas duas espécies.
