AbstractMass spectrometric data indicate that products of linoleate oxidation by flaxseed lipoxidase consist of 80% 13‐hydroperoxyoctadecadienoate and 20% 9‐hydroperoxyoctadecodienoate; the products of linolenate oxidation by flaxseed lipoxidase consist of 88% 13‐hydroperoxyoctadecatrienoate and 12% 9‐hydroperoxyoctadecatrienoate. Flaxseed lipoxidase possesses a high degree of specificity for attachment of oxygen to linoleic and linolenic acid molecules.
