Identification of galactinol in potato tubers

Abstract

An oligosaccharide detected by gas chromatography of trimethylsilyl derivatives of potato extracts has been isolated and identified as galactinol, 1-0-α-D-galactopyranosyl-(1R)-myo-inositol. Galactinol was not detected in freshly harvested tubers, but 0.1% was found in cold-stored tubers. The level of this sugar decreased during reconditioning of cold-stored potatoes.
