In trockenen Erbsensamen wurde alkalischeβ-Fruktofuranosidase mit Transferaseaktivitat gefunden. Ein angereichertes Enzympraparat, durchL-Cystein, 2-Merkaptoethanol und Glutathion aktiviert und durchp-Chlormerkuribenzoat, Iodoacetamid,N-Ethylmaleimide undL-Cystin inhibiert, wurde hergestellt.
