La reaction de l'iode sur les proteines intactes, aux pH 4et 6, permet un dosage rapide et facile des aminoacides tyrosine, tryptophane, methionine (dans ce cas, on utilise la reaction deLavine). La formation de dithiocarbamate a pH 9,2 avec le sulfure de carbone, a 50°, permet un dosage des groupes NH2 libres, groupes appartenant pour la plupart a la lysine. Les alterations chimiques de la molecule proteique, consecutives aux vieillissement, etc ... (formation de sulfoxyde, etc ...), peuvent ainsi se suivre quantitativement.
