Abstract

AbstractAn investigation has been conducted to determine the levels of dimethylnitrosamine in 13 samples of Canadian herring meals taken from the Atlantic and Pacific coasts. The concentration of dimethylnitrosamine found in these meals, which had not been treated with nitrate or nitrite varied between 0.15 and 1.0 parts/106.
