Abstract

AbstractBei der dynamischen Gefriertrocknung wird die sich bildende Trockenschicht permanent abgerieben, was eine Steigerung der Trocknungsleistung mit sich bringt. Über die experimentelle Ermittlung der Wärmeübergangskoeffizienten in Abhängigkeit einiger Prozessparameter (Drehfrequenz, Beladung, Trocknungstemperatur) kann der Wärmeübergangskoeffizient mittels des vorgestellten Modells interpoliert werden und daraus die Trocknungsdauer bestimmt werden. Als Modellsysteme wurden Milchkugeln, Milchpellets sowie Starterkulturpellets des Stamms Pediococcus pentosaceus verwendet.
