AbstractThe physical properties of the amino acids determine the structure and function of the proteins in which they are found. This appendix presents some useful details and relevant physical characteristics of the natural amino acids and modified amino acids (i.e., chemical structures, explanations of the role these structures play in enzymes, relative hydrophobicities, shapes and volumes, and values for some common mass changes due to post‐translational modifications).
