Abstract

Разработаны концептуальные подходы по созданию, продвижению и оценке конкурентных технологий пищевых продуктов с улучшенными потребительскими характеристиками. Предложены и пробированы новые методики безопасности и качества, включая функциональную эффективность и широту ассортимента. Научный подход обеспечивает возможность развития методологии персонифицированного питания применительно к пищевой продукции нового поколения, получаемой на основе использования современных знаний в геномике, протеомике, нутриметаболомике и других науках. Conceptual approaches have been developed for the creation, promotion and evaluation of competitive technologies for food products with improved consumer characteristics. New methods of safety and quality have been proposed and tested, including functional efficiency and breadth of the range. The scientific approach provides an opportunity to develop a methodology for personalized nutrition in relation to food products of a new generation, obtained through the use of modern knowledge in genomics, proteomics, nutrimetabolomics and other sciences.
