Ochratoxine et café

Abstract

Cette présentation montre les résultats majeurs obtenus au cours d'un travail R&D portant sur la contamination du café par l'ochratoxine A (OTA) et les moisissures toxinogènes responsables. Partant de l'hypothèse que les contaminations se développent essentiellement au cours du premier traitement post-récolte au cours duquel, la teneur en eau du café doit passer de 65% à moins de 12%, des expérimentations ont été conduites afin d'évaluer l'accroissement des contaminations. Si on observe une augmentation de la teneur en OTA au cours du séchage et une évolution des populations fongiques, il n'a jamais été possible de mettre en évidence des différences statistiquement significatives. La contamination semble dépendre de l'état initial du café et des conditions environnementales lors de la production. En revanche, une enquête a montré qu'il existe des différences significatives entre graines saines et graines défectueuses, celles-ci étant liées aux pratiques agronomiques et aux conditions environnementales de la culture. Il apparaît, en conclusion, qu'il est important d'approfondir les connaissances sur les mécanismes de contamination au champ afin d'envisager d'éventuelles mesures de prévention. En termes de développement, si ces mesures préventives s'avèrent indispensables pour maintenir la contamination à un niveau acceptable, il sera alors primordial d'entreprendre des actions au niveau des organisations de producteurs en s'appuyant sur des études socio-économiques pour les faire adopter.
