
The problem of nitrates accumulation in plants is considered. The peculiarities of nitrates accumulation depending on various factors are given. The results of the analysis of vegetables and fruits and their nitrate content are presented. It has been established that in the greater part of the vegetables and fruits under study the content of nitrates corresponds to the normative values. The possible reasons for the excess of nitrates in some of the fruits under study are indicated. Recommendations are given to reduce the concentration of nitrates in the products.
Рассмотрена проблема накопления нитратов в растениях. Приведены особенности аккумуляции нитратов в зависимости от различных факторов. Представлены результаты анализа овощей и фруктов, содержание в них нитратов. Установлено, что в большей части исследуемых овощей и фруктов содержание нитратов соответствует нормативным значениям. Указаны возможные причины превышения нитратов в некоторых исследуемых плодах. Даны рекомендации по снижению концентрации нитратов в продуктах.
