Особенности определения контрольно-критических точек при производстве безалкогольных напитков

Abstract

В данной статье рассматривается вопрос, связанный с особенностями разработки контрольно-критических точек при производстве кваса на одном из предприятий Республики Марий Эл. Точки определяются на основании системы менеджмента безопасности пищевой продукции, которая включает в себя программу ХАССП. В рамках исследования производится идентификация потенциальных факторов на всех стадиях жизненного цикла продукции, обнаружение контрольно-критических точек и разработка предупреждающих и корректирующих действий. Результаты, полученные в ходе исследования, учитываются при производстве высококачественной продукции.

This article discusses the issue related to the peculiarities of the development of control and critical points in the production of kvass at one of the enterprises of the Republic of Mari El. The points are determined on the basis of the food safety management system, which includes the HACCP program. As part of the study, potential factors are identified at all stages of the product life cycle, control and critical points are detected, and preventive and corrective actions are developed. The results obtained during the study are taken into account in the production of high-quality products.
