
В статье представлено современное состояние производства и контроля качества мясной продукции. Рассмотрены некоторые методы и способы нарушения процесса производства колбасной продукции. Анализируются причины значительного снижения качества мясо-молочной продукции по сравнению с предыдущим десятилетием. Обосновывается необходимость разработки автоматизированной системы контроля колбасной продукцииIn the paper the modem state of manufacture and quality of examining sausage production is submitted. Some methods and ways of infringement of manufacture process of sausage production are considered. The reasons of significant decrease of quality of meat and milk production are analyzed in comparison with the previous decade.
