Проблемы микробиологической безопасности молочного сырья. Роль первичной обработки

Abstract

Проанализирована эффективность работы фильтров грубой очистки молока путем сравнения физико-химических и микробиологических показателей молока на всех этапах технологической обработки. Сделаны выводы, что эффективная работа фильтров обеспечивает не более чем три часа непрерывной работы, дальнейшая эксплуатация приводит к резкому ухудшению качества сырья.The efficiency of rough cleaning filters for milk is analyzed by comparison of physical, chemical and microbiological indexes of milk on all stages of technological treatment. Conclusions are done, that effective work of filters provides no more than three o'clock of continuous work, further exploitation results in the sharp worsening of quality of milk.
