Антиоксидантная активность как показатель профилактической эффективности функциональных продуктов

Abstract

Представлены исследования антиоксидантной активности чая байхового, реализуемого в крупных супермаркетах г. Екатеринбурга, а также растительного сырья, произрастающего на территории Свердловской области. Доказана возможность снижения отрицательного влияния техногенных факторов путем обогащения традиционно потребляемых продуктов местным растительным сырьем, обладающим биопротекторными свойствами.
