Влияние криоскопических температур растворов сахаров для приготовления желейных наполнителей в пищевой промышленности

Abstract

The research results on the influence of the sugar (glucose, fructose, sucrose) solutions on the jelly stuffing preparation are presented in the article. The data on the determination of the cryoscopic temperatures of sucrose, glucose, fructose water solutions in the concentration range from 10 to 60 % are given, the cryoscopy schedule for the solution cryoscopic temperature determination depending on its concentration is received.

В статье представлены результаты исследований о влиянии растворов сахаров (глюкоза, фруктоза, сахароза) на приготовление желейных наполнителей. Приведены данные по определению криоскопических температур водных растворов сахарозы, глюкозы, фруктозы в диапазоне концентраций от 10 до 60 %, получен график криоскопии для определения криоскопической температуры раствора в зависимости от его концентрации.
