В настоящее время установлено, что различные способы воздействия на многокомпонентные пищевые системы позволяют интенсифицировать ведение отдельных этапов технологии пищевых производств. Изучение влияния электрофизических методов воздействия на компоненты молока дает возможность установить динамику изменения технологических свойств молокаThe urgency of the raw materials problem from the materials quantity and quality point of view has not declined. Nowadays, it is determined that various influence methods used with complex products allow to intensify particular stages of food production. Analysis of effects of electrophysical methods of influence on dairy components allows to determine the dynamics of technological properties of milk.
