Abstract

Установлено, что количество меню, не отвечающих требованиям санитарного законодательства, значительно возросло и составило в 2012 г. 50% от общего количества проведенных экспертиз. По результатам экспертиз отмечена несбалансированность питания, недостаток белка, избыток углеводов. Лабораторные исследования пищевых продуктов, отобранных на пищеблоках дошкольных учреждений Владивостока за 2010–2012 гг., показали, что наблюдается увеличение удельного веса проб готовых блюд, не отвечающих гигиеническим требованиям по микробиологическим показателям, на калорийность и полноту вложения, на вложение витамина «С».
