
Проведен анализ технологических свойств молока коров черно-пестрой породы отечественной и голландской селекции. Установлено, что молоко коров как отечественной так и голландской селекции по составу и технологическим свойствам отвечает современным требованиям, предъявляемым при выработке основных молочных продуктов
The analysis of milk technological properties of black-motley cows of both domestic and Dutch selection was conducted. It was established that the composition and technological properties of cow’s milk of both the domestic and Dutch selection meets the modern requirements to the main dairy products
