Исследование процесса ферментации молочных и молокосодержащих модельных сред

Abstract

Исследован процесс ферментации оптимальных по составу молочных и молокосодержащих модельных сред ассоциациями культур с пробиотическими свойствами. Получены математические зависимости, и предложена модель формирования биотехнологической молочной и молокосодержащей системы, характеризующая взаимосвязь активности пробиотических культур и состава модельных сред. Полученные результаты исследования использованы при разработке технологии новых молокосодержащих продуктов.
