Abstract

Представлены данные исследований по изучению влияния массовой доли сухих веществ в подсырной сыворотке на выход термокислотных сгустков при ее сгущении.The research data of the effect of the dry solids weight ratio in cheese way on the yield of thermal acid curds at whey condensation is presented.
