Органолептическая оценка формованных изделий различных рецептур из дальневосточной красноперки и кефаль-лобана

Abstract

Показаны экспериментальные исследования по подбору растительных компонентов, добавляемых в фарш из дальневосточной красноперки и кефаль-лобана, и проведена оценка органолептических показателей готовых котлет. Установлено оптимальное количество внесения данных компонентов в рыбный фарш и разработаны рецептуры формованных изделий, обогащенных растительным сырьем.

Experimental investigations are shown on selecting plant components added to the mince from Far Eastern redeye and grey mullet and estimation of organoleptic indices of cooked cutlets is made. Optimum quantity of these components in the mince is stated and receipts of formed products enriched with plant components are worked out.
