Abstract

Статья посвящена исследованию коллоидной системы водного извлечения чаги. С использованием фотонно-корреляционной спектроскопии (ФКС) определены размеры частиц дисперсной фазы коллоидных систем извлечений из чаги, полученных из двух образцов сырья и при применении в экстракции микробиологических ферментных препаратов, содержащих гидролазы некрахмалистых полисахаридов. Показано, что размер крупных частиц мицелл полифенол-оксикарбонового комплекса (ПФК) во всех исследованных извлечениях, полученных из чаги, лежит в диапазоне размеров мицелл казеина коровьего молока, а мелкие частицы сопоставимы по размерам с субмицеллами казеина.
