Abstract

На широком фактическом материале показано техническое состояние пищевых предприятий Среднего Поволжья. Изучены факторы, препятствовавшие освоению производственных мощностей: высокая степень износа оборудования, низкий уровень механизации, сезонный характер большей части производств, частые простои, вызванные нехваткой сырья и материалов, перебоями в снабжении водой, топливом, электроэнергией, тарой, задержками с выходом из ремонта, авариями, пожарами, недостаточной квалификацией рабочих. Доказано, что в рассматриваемый период проводилась значительная работа по оптимизации производственного процесса: укреплялась энергетическая база предприятий, совершенствовался теплотехнический контроль, удлинялись железнодорожные пути, внедрялись новейшие достижения науки.

The technical condition of the food enterprises of the Middle Volga region is shown on a wide actual material. The factors interfering of development of capacities are studied: a high degree of deterioration of the equipment, a low level of mechanisation, a seasonal nature of major parts of manufactures, a frequent idle times, caused by a shortage of raw materials, faults water supply, fuel, electricity, accidents, fires, insufficient qualification of workers. It was proved that considerable work had done to improve the production optimisation: the power supply sources of the enterprises became stronger, the control of heat engineering improved, tracks were extended, science advanced achievements took place.
