Физико-химические показатели и аминокислотный состав новых помологических сортов плодов граната

Abstract

Исследованы физико-химические показатели и аминокислотный состав плодов новых сортов граната и их изменения в зависимости от условий хранения. Показано, что сок и кожура граната богаты органическими кислотами, аскорбиновой кислотой, незаменимыми аминокислотами и другими физиологически активными веществами. Аминокислотный состав лучше сохраняется при хранении в модифицированной газовой среде.
