К вопросу о повышении пробиотических свойств кисломолочных продуктов

Abstract

Кисломолочные продукты являются природным источником пре- и пробиотических веществ, способными регулировать многие физиологические функции организма. Автором рассмотрены такие способы повышения функциональности продуктов, как обогащение их пищевыми волокнами и олигосахаридами, сокультивирование бифидобактерий и пропионовокислых бактерий с различными штаммами лактобактерий и молочнокислых стрептококков, обработка сырья ультразвуком, что позволяет получать продукты с более высокими, по сравнению с традиционными пре- и пробиотическими свойствами.
