Abstract

Последние десятилетия в мире технологий и ассортимента пищевых продуктов характеризуются огромными изменениями. Они привели к упрощению технологий и изменению производственных циклов, выразились в новых технологических и аппаратурных решениях. Известная проблема нехватки кальция в рационе человека, особенно детей, приводит авторов к решениям, способствующим дополнительному введению кальцийсодержащих добавок.
