Diseño y evaluación de un mosaico hospitalario para pacientes con disfagia

Abstract

Introducción: la disfagia es un síntoma prevalente en múltiples enfermedades, para lo cual se requiere de una alimentación adecuada, segura y aceptable. La modificación de la consistencia de los alimentos es la principal medida terapéutica aplicada y representa un desafío para la cobertura de los requerimientos nutricionales. Objetivo: evaluar la seguridad, aceptabilidad y eficacia de un mosaico hospitalario diseñado para pacientes con disfagia. Métodos: estudio transversal. Mediante un muestreo no probabilístico, intencional y por conveniencia se incluyeron 31 pacientes internados en un hospital público de Buenos Aires. Se diseñaron 10 opciones de menú. La aceptabilidad fue evaluada mediante una escala de Likert, la seguridad mediante pruebas de la International Dysphagia Diet Standardisation Initiative (IDDSI) y se calcularon los porcentajes de adecuación de los menús. Resultados: todos los menús fueron seguros según los criterios IDDSI. En cuanto a la aceptabilidad, nueve de 10 superaron el puntaje mínimo establecido para ser considerados aceptables. Del total de la muestra, un 93,54 % cubrió más del 60,00 % de sus requerimientos nutricionales diarios. Conclusión: se logró diseñar un nuevo menú hospitalario, el cual alcanzó un nivel adecuado de aceptación y cumplió con las pruebas de seguridad de IDDSI. El puntaje obtenido en nueve de 10 menús fue mayor al esperado.
