Abstract

Авторами произведены экспериментальные исследования процесса сушки абрикоса инфракрасным излучением выделенной длиной волны для получения кураги до заданного влагосодержания в зависимости от технологических и динамических параметров с сохранением витаминов и минералов в конечном продукте.
