Abstract

<p align="justify"> As proteínas são compostos orgânicos complexos, fundamentais aos organismos animal e humano, que têm como principal função na dieta suprir o organismo de aminoácidos indispensáveis em quantidades adequadas para síntese e manutenção dos tecidos corporais. A determinação da digestibilidade proteica de um alimento é um fator importante para estimar a sua qualidade, sendo o método in vitro uma alternativa rápida e fácil. A baixa digestibilidade dos grãos é atribuída a fatores antinutricionais que diminuem a atividade das enzimas digestivas. O objetivo deste trabalho foi determinar a digestibilidade proteica in vitro de proteína de grãos de soja e feijões, integrais e sem casca, veriï¬ cando assim se esta interfere na digestibilidade. Veriï¬ cou-se que a retirada da casca dos grãos interferiu na digestibilidade in vitro. </p>
