PENDUGAAN UMUR SIMPAN MINUMAN BERPERISA APEL MENGGUNAKAN METODE ACCELERATED SHELF LIFE TESTING (ASLT) DENGAN PENDEKATAN ARRHENIUS

Abstract

Minuman ringan merupakan minuman olahan dalam bentuk bubuk atau cair yang mengandung bahan makanan atau bahan tambahan lainnya baik alami maupun sintetis, yang pada umumnya dikemas dalam gelas plastik PP. Informasi umur simpan untuk produk tersebut belum banyak dilaporkan.Tujuan dari penelitian ini adalah menentukan laju perubahan mutu, menentukan parameter kritis, dan menduga umur simpan minuman berperisa apel dengan metode akselerasi (Arrhenius) yang disimulasikan pada tiga kondisi suhu penyimpanan pada inkubator (30ºC, 35ºC, dan 45ºC). Parameter yang diamati selama proses penyimpanan adalah pH, warna, total asam, kadar vitamin C, total padatan terlarut, dan organoleptik.Penolakan panelis terjadi pada parameter aroma. Hasil penelitian menunjukkan nilai energi aktivasi terkecil digunakan untuk penentuan umur simpan produk yaitu parameter total asam (reaksi orde satu) dengan regresi linier y = -2127.944x – 0.244. Umur simpan minuman berperisa apel adalah 1 tahun 2 bulan pada suhu 25ºC.
