Influencia de la temperatura, tiempo de residencia y relación carbón activado/zumo de fruta en la absorbancia y retención de compuestos indeseables en el zumo filtrado de uva verde (Vitis vinífera)

Abstract

En el presente trabajo se evaluó el efecto de la proporción adsorbente/solución, el tiempo de residencia y la temperatura de residencia del carbón activado en la adsorción de jugo de uva (Vitis vinífera) sin pepa y pelada, previamente filtrada dos veces con un paño doble de tocuyo y la ganancia de sólidos del carbón activado usado; para este fin se utilizó un Diseño Compuesto Central Rotacional (DCCR), obteniendo como resultado que la temperatura, el tiempo de residencia y la relación carbón activado/zumo de frutas influyen de manera significativa en la absorbancia en el zumo de uva. Así mismo se pudo determinar que solo la relación carbón activado/zumo de fruta influye significativamente en el peso retenido por el carbón activado.
