Abstract

La epidemia de enfermedad cardiovascular (ECV) fue –y sigue siendo en los medios masivos y profesionales– atribuida a nutrientes contenidos en alimentos naturales, principalmente grasa saturada y colesterol. Las conclusiones del Estudio de los siete países dieron lugar a la “hipótesis lipídica“, que fue aplicada aun cuando los resultados de estudios inmediatos no la convalidaron. Los cambios alimentarios propuestos apuntaron a limitar la ingesta de grasas saturadas y de colesterol (carnes, lácteos, huevos). El conjunto de estas recomendaciones fue imperfecto, aun para conseguir los objetivos de la hipótesis lipídica. En parte porque las grasas saturadas de carnes y lácteos estaban siendo sustituidas inadvertidamente en los aceites agregados y en las grasas sólidas (margarinas industriales y shortening) empleados en la preparación de comestibles procesados que accesoriamente contenían carbohidratos para reemplazar las calorías de las grasas saturadas. En aquellos países que han adoptado el nuevo modelo, las estadísticas muestran aumento de la ECV, mientras que estudios actuales no han podido comprobar las afirmaciones de la hipótesis lipídica. Los efectos cardiovasculares de los ácidos grasos esenciales incorporados como sustitutos de las grasas animales deberían ser considerados
