KARAKTERISTIK KIMIA BAKSO SAPI (KAJIAN PROPORSI TEPUNG TAPIOKA: TEPUNG PORANG DAN PENAMBAHAN NaCl)

Abstract

Bakso adalah makanan khas Indonesia, berbahan baku daging sapi, tepung tapioka, garam, STPP dan bumbu. STPP dalam bakso sebagai bahan pengikat, namun penggunaan STPP dibatasi 0.30% dari berat daging. STPP ini dapat digantikan dengan tepung porang (Amorphophallus muelleri Blume) yang mengandung glukomanan. Glukomanan dalam tepung porang dapat bersifat sebagai bahan pengikat dan bahan pengisi. Penelitian ini bertujuan untuk mengetahui proporsi tepung tapioka : tepung porang dan penambahan NaCl untuk menghasilkan bakso sapi dengan karakteristik kimia terbaik. Penelitian ini menggunakan metode Rancangan Acak Kelompok (RAK) dengan 2 faktor yaitu proporsi tepung tapioka : tepung porang dan penambahan NaCl dengan 3 kali ulangan. Hasil penelitian menunjukkan proporsi terbaik tepung tapioka 29% : tepung porang 3% dengan penambahan NaCl 6% memiliki karakteristik kadar air 72.20%, kadar abu 2.21%, kadar protein 7.53%, kadar pati 8.97%, kadar lemak 6.84%, kalori 413.61 Kkal/g, kadar serat kasar 1.21%, kadar oksalat 0.99%, dan kadar glukomannan 2.86%.
