АЛГОРИТМ РАЗРАБОТКИ МОДЕЛИ ЭКСТРУДАТА СМЕСИ СЕМЯН РАСТОРОПШИ И ЗЕРНА ПШЕНИЦЫ

Abstract

В статье на основе методологии системного подхода обоснован алгоритм действий при разработке модели экструдата смеси расторопши пятнистой и зерна пшеницы. Проанализированы современные подходы к математическому описанию многокомпонентных смесей для производства продуктов питания. Предложен комплексный критерий для модели функционально-технологических свойств (ФТС) экструдата с учётом взаимодействия его ингредиентов. Показана роль доминирующих компонентов и факторов модели ФТС экструдата смеси семян расторопши и зерна пшеницы. Сделаны выводы в части перспективы дальнейших исследований в рамках заявленной проблемы.
