Mehanizam probiotičkog djelovanja bakterija mliječne kiseline

Abstract

Probiotik se može definirati kao pojedinačna ili mješovita kultura živih mikroorganizama, koji primjenjeni u ljudi ili životinja, blagotvorno djeluju na domaćina poboljšavajući mu svojstva autohtone mikroflore. Znanstvena osnovica za izučavanje i razvoj probiotika proistječe iz saznanja da je crijevna flora uključena u zaštitu domaćina (čovjeka ili životinja) od naseljavanja intestinalnog trakta neautohtonim mikroorganizmima. Probiotičko djelovanje bakterija mliječne kiseline može se iskazati različitim mehanizmima djelovanja prema patogenim mikroorganizmima u intestinalnom traktu: 1. Smanjivanjem broja živih bakterija: a) proizvodnjom antibakterijskih supstancija (bakteriocina) , b) natjecanjem za hranjiva, c) natjecanjem za mjesta vezanja na crijevnoj epitelnoj površini ; 2. Izmjenom mikrobnog metabolizma: a) povečanjem ili b) smanjenjem enzimne aktivnosti i 3. Stimuliranjem imunološkog sustava povečanjem a) razine antitijela i b) makrofagne aktivnosti.
