Abstract

La alimentación es un tema que ha suscitado un gran interés a lo largo de la historia desde la época de Hipócrates, a quien se le atribuye la frase “más sea tu alimento tu medicina, y tu medicina tu alimento”, en la que se pone en evidencia la relación directa y clara entre la alimentación y la salud. Fue en el siglo pasado cuando se pudieron establecer, con mayor precisión, las relacio nes entre algunos componentes de las dietas y las enfermedades crónicas no transmisibles; enfermedades cuya prevalencia en el mundo aumenta a ritmo acelerado y cuya tasa de mortalidad es alta, y la región de Las Américas no es la excepción. Pese a que durante el quinquenio 2012-2017 la mortalidad por tales enfermedades se redujo un poco, aún continúa siendo elevada. Resulta preocupante que, en América, en los últimos años, las principales causas de mortalidad fueron la diabetes, las enfermedades cardiovasculares y el cáncer, que, conjuntamente con las enfermedades respiratorias crónicas, representaron alrededor del 40 % de las muertes anuales en la región.
