Abstract

Em 94 amostras de méis de flores silvestres, 27 de flores de eucalipto e 34 de flores de laranjeira (totalizando 155 amostras) produzidas por Apis mellifera em 96 municípios do Estado de São Paulo foram determinados o teor de água, acidez, pH, o índice de formol e a porcentagem de amostras que se enquadram nas especificações da legislação brasileira. De acordo com os dados obtidos, conclui-se que a caracterização das amostras estudadas no presente trabalho é estabelecida por faixas de variação de valores obtidos de 16,0 a 23,4% para o teor de água, 12,5 a 75,5 meq/kg para a acidez, 2,3 a 5,1 para pH e 5,0 a 20,5 mL/kg para índice de formol. Dentre os parâmetros exigidos na legislação brasileira para qualidade do mel, o teor de água e a acidez apresentaram porcentagens de amostras que se enquadram nas instruções normativas, de 83,8% e 94,8%, respectivamente.
