Abstract

The aim of this paper was to investigate the possibilities of using different adjuncts in beer production and to study their characteristics and the reasons for their use. The need to use adjuncts often result from intention to produce a functional beer, such as gluten-free beer. The gluten-free beer available on the market is usually brewed with the addition of exogenous enzymes, and the raw materials for malt are mainly buckwheat, sorghum and millet. Other reasons for using adjuncts in beer production include reducing production costs, limited availability of certain raw materials, tradition and culture, reduction of the production process, caring for natural resources, improving the colloidal stability of beer, responding to changes in consumer habits, etc. Instead of hops, it is possible to use Garcinia cola (a typical African fruit), lemon balm, "pau-amargo" and artichoke. Instead of barley malt it is possible to use many other cereals, e.g. rice, corn, potato flour, wheat, etc. Another type of adjuncts for malt are extracts formed from sugar (sugar beet sugar, raw cane sugar and glucose).

Cilj rada istražiti je mogućnosti korištenja različitih surogata u proizvodnji piva te proučiti njihove karakteristike i razloge njihova korištenja. Potreba za korištenjem surogata često proizlazi iz namjere da se proizvede funkcionalno pivo, kao što je bezglutensko pivo. Pivo bez glutena dostupno na tržištu obično se kuha s dodatkom egzogenih enzima, a sirovine za slad uglavnom su heljda, sirak i proso. Drugi razlozi upotrebe surogata u proizvodnji piva odnose se na smanjenje troškova proizvodnje, ograničenu dostupnost određenih sirovina, tradiciju i kulturu, skraćivanje procesa proizvodnje, brigu za prirodne resurse, poboljšanje koloidne stabilnosti piva, reakciju na promjene u potrošačkim navikama, i sl. Umjesto hmelja, moguće je koristiti i druge biljke: Garcini kola, matičnjak, „pau-amargo“ i artičoku. Umjesto ječmenog slada moguće je koristiti brojne druge žitarice, npr. rižu, kukuruz, brašno od krumpira, pšenicu, i sl. Druga vrsta surogata za slad su ekstrakti koji se tvore iz šećera, npr. šećer iz šećerne repe, sirovi trščani šećer te glukoza.
