ANALISIS KUALITAS SOSIS AYAM DENGAN EDIBLE DAN NON EDIBLE BERDASARKAN MASA SIMPAN

Abstract

Penelitian ini bertujuan untuk mengetahui dan menganalisis kualitas sosis ayam “Edible dan Non Edible”casing berdasarkan masa simpan. Penelitian ini dilakukan di laboratorium Pengolahan Program Studi Tata Boga, Fakultas Teknik, Universitas Negeri Jakarta. Waktu pelaksanaan penelitian dilakukan sejak bulan Juli 2015 hingga Januari 2016. Analisis kualitas sosis ayam dilakukan dengan cara uji deskriptif terhadap aspek warna, rasa, aroma, dan tekstur, pada suhu dan waktu penyimpanan berbeda oleh panelis terlatih. Setelah melalui tahap validasi yang diujikan kepada 5 orang panelis dengan sosis ayam pada suhu dan waktu berbeda. Analisis hasil uji masa simpan pada suhu ruang untuk sosis ayam edible dan non edible casing yang mengalami perubahan pada hari ketiga. Hasil menunjukkan sosis ayam edible dan non edible casing pada simpan pada suhu dingin tiga hari tidak mengalami perubahan. Sosis ayam edible dan non edible casing pada suhu beku (freezer) untuk periode waktu tiga minggu, mengalami perubahan internal maupun eksternal.
